Alu Channa (Kabul Kadale Kalu)

 ಕಾಬುಲ್ ಕಡಲೆ ಕಾಳು  


Ingredients:
Oil - 1 tblsp
Onoin - 2 Chopped
Cloves - 2
Chickpeas/Channa - 3 Cups( cooked or canned)
Potatoes - 2 ( Cooked and hand mashed to create small lumps)
Tomatoes - 2
Red chilli powder - 1 tsp (adjust spice accordingly)
Turmeric powder - 1/2 tsp
Garam Masala powder - 1 tsp
Coriander leaves for garnishing.
Salt

Directions:
1. Heat Oil in a pan and add 2 cloves and let it sit for a minute



2. Add chopped onions and fry until it softens.

3. Add Chopped tomatoes and fry until tomatoes softens.

4. Add turmeric powder, red chilli powder, garam masala powder and salt and fry for 3 minutes.

5. Next add the boiled and half mashed potatoes into the mix and cook for another 2 minutes.

6. Add cooked chickpeas and stir the mixture and let it simmer for another 5 minutes ( Add water if it drys during simmering).

7. Garnish with coriander and Alu Channa is ready. Goes very well with Poori. Enjoy!
 

Alu Gobi Mattar (Dry)





Ingredients:

Garlic - 2 cloves
Onoin - 2 Chopped
Cloves - 2
Frozen peas 1 cup ( or soaked & cooked dry peas)
Potatoes - 2
Cauliflower - 2 Cups
Tomatoes - 2
Red chilli powder - 1 tsp (adjust spice accordingly)
Turmeric powder - 1/2 tsp
Garam Masala powder - 1 tsp

Maida/all-purpose flour -  1 tsp ( optional)
Oil - 1 tblsp


1. Heat oil in a pan, Add finely chopped garlic  and 2 cloves. Fry for a minute only


2. Add Chopped onions and fry until it turns translucent.


3. Add  peas and fry until the frozen peas is done but not mushy.




4. Add boiled and cubed potatoes and fry for a minute or until its cooked to your liking.
  
5. Add the cauliflower florets and fry for a minute


6. Add chopped tomatoes, turmeric, chilli powder, garam masala powder and mix well.



7. Add salt and little water if needed and cook covered for 3-5 mins. Do not overcook Cauliflower.
(If its watery, add little maida powder mixed in water and cook another minute and it thickens the consistency)

8. Enjoy the dish with your favorite  chappathi or roti.
